-Preheat oven to 375. Gently roll out the empanada dough discs on a work surface. -Stuff each disc with a piece of guava paste, a piece of cream cheese, and a sprinkle of the queso quesadilla. -Beat egg in a small bowl. Use a pastry brush to line the edges of the empanadas with the egg wash, then close them up. Use a fork to crimp the edges together and seal them shut. -Place closed empanadas on a parchment lined baking sheet. Brush the tops with more egg wash, then sprinkle on a touch of sugar. Bake for about 30 minutes, until golden brown. Serve and enjoy!
