The best way to drink a spritz, perfect for Mother’s Day brunch! These popsicle cocktails were inspired by a dirty Shirley, but opted for pure cherry juice and champagne instead of sprite/vodka.

In a large bowl, stir together the cherry juice, lime zest and juice, lemon juice, and soda water. Carefully pour the juice mixture into 4 ice pop molds, filling each about three-quarters of the way. Add in the sticks, then freeze for at least 4 hours, until completely solid. When ready to serve, pour the champagne into large glasses. Remove the popsicles from the molds and place one upside down in each glass. Garnish with a sprig of mint. Serve immediately. Enjoy!
