Cut the goat cheese log into 9 pieces - 3 that are biggest, 3 that are medium, and 3 that are small. Roll up the pieces into balls. Set up the flour, beaten egg, and Panko in 3 separate bowls. Dredge each goat cheese ball in the flour, then evenly coat the ball with egg, and then dredge in the Panko to create an even layer. Set the balls on a plate and place into the freezer for 20-30 minutes. In a large sauce pan, pour in the vegetable oil about an inch high. Heat up the oil until it reaches about 375 degrees F. Then, carefully drop in the goat cheese balls, being careful to not overcrowd. Fry for about 30 seconds on each side until nice and golden brown. Remove to a paper towel-lined plate, and immediately sprinkle each ball with flaky sea salt. On a serving plate, create about 1 tablespoon each size blobs of fig jam. Then take each piece of prosciutto and roll them up into ribbons. Place the prosciutto ribbons on top of the fig jam, then place the goat cheese balls on top of the prosciutto with the biggest at the bottom, then medium, then small (like a snowman!) Place 2 cornichons on the sides of each snowman as arms. Carefully squeeze the balsamic glaze into a snowman face and buttons. Carefully place tiny carrot triangles as the noses. Serve and Enjoy!
