In a large bowl, combine the ground turkey, onions, garlic, salt, pepper, garlic powder, onion powder, and crushed red pepper flakes. Stir to evenly mix, then form the mixture into 2 balls. Lay down 2 Mission Carb Balance Soft Taco Tortillas and place a ground turkey ball on each. Use your hand to smash the turkey mixture down into a thin, flat layer. Heat olive oil in a large pan over medium. One at a time, lay the tortilla turkey side down and cook for about 5 minutes. The turkey should brown up nicely. Flip the tortilla and lay on the cheddar slice. Allow to cook for about 5 more minutes, until the tortilla is golden brown. Remove from the pan and repeat with the 2nd tortilla. Plate the cooked tortilla turkey tacos and top with ketchup, mustard, tomato slices, lettuce, pickles, and pickled onions. Fold up like a taco and enjoy!
