This high-protein grated egg BLT toastie is a perfect summer lunch, featuring turkey bacon, sliced tomato, avocado, and a spicy mayonnaise spread, topped with grated hard-boiled eggs.

Preheat oven to 400 degrees F. Place turkey bacon on a foil lined baking sheet and bake for 15-20 minutes, until cooked but not too crispy. Bring a small pot of water to boil. Add in the eggs and boil them for 12 minutes, then place them in an ice bath to cool. Peel the eggs once cool. Toast the bread. In a small bowl, combine the Calabrian chilis and mayonnaise. Stir to mix. Top the toasts with the spicy mayo, then add on the cooked bacon, plus a large tomato slice on each. Season the tomato with salt & pepper. Top the tomato with avocado slices then season that with salt & pepper and drizzle on some spicy honey. Using a cheese grater, grate the hard boiled eggs onto the toasts. Season with extra salt if you’d like and enjoy!
