High Protein Chicken Caesar Waffle

A delicious and high-protein chicken Caesar waffle, topped with massaged kale, homemade Caesar dressing, and optional pickled onions and tomatoes. Perfect for lunch!

1. In a bowl, combine the shredded chicken, 1 egg, and about 1/8 cup Parmesan cheese. Add in 1 tsp kosher salt, 1/2 tsp black pepper, the garlic powder, and paprika. Stir to mix well. 2. Preheat a small waffle iron and spray it with cooking spray. Place half of the chicken mixture into the waffle iron, spread it out, and close the iron. Allow the waffle to cook for 10 minutes or more, until deep golden brown. Repeat with the remaining mixture for the second waffle. 3. Meanwhile, make the Caesar dressing. On a cutting board, place the minced garlic and a sprinkle of salt. Use your knife to grind the garlic into a paste. Add the garlic into a bowl, plus the anchovy paste, egg yolk, Dijon mustard, Worcestershire, and lemon juice. Mix well. Going slowly, drizzle in about 1/4 cup of olive oil, while whisking – this should create a thick dressing. Add in about 2 tbsp freshly grated Parmesan and mix that in. 4. In a large bowl, add in the kale plus a drizzle of olive oil and sprinkle of salt. Use your hands to massage the kale for several minutes. 5. On the cooked waffles, divide the massaged kale and drizzle with the Caesar dressing. Garnish with additional Parmesan cheese, and pickled onions & diced tomatoes (if using). Enjoy immediately!
