Some of the best potatoes I’ve ever put in my mouth - fondant/melting potatoes are sooo heavenly 🥰 give these a try this holiday szn!

Preheat oven to 400F. Cut the potatoes into inch long slices then (optional) cut ping pong ball sized circles out of them. Pat them dry. Heat ghee in a Dutch oven or large pan over medium high. Add in the potatoes to sear for about 3 minutes per side - they should have a nice golden crust. Add in the garlic, rosemary, thyme, and chicken broth. Bake for about 20 minutes or until fully fork tender. Season with salt & pepper to taste. Serve and drizzle the extra juices on top. Enjoy!
