Preheat oven to 400F. Line a baking sheet with parchment. Lay the pickle slices on the parchment to create square shapes. Top the pickle squares with a hearty layer of the cheese. Bake for about 20 minutes, until cheese is golden and crisp on the edges. Remove from oven when done and allow to cool slightly. Wipe up any liquid with a paper towel. Use the cheesy pickle wraps to assemble a sandwich! We made a simple wrap with prosciutto, salami, mayo, calabrian chilis, and tomato. Fold up and enjoy!
