Separate the fish from the rice on the nigiri. Set the rice aside, and chop the fish very finely. In a bowl, add in the chopped fish plus about 1 tbsp each of sriracha, kewpie mayonnaise, and soy sauce. Stir to evenly mix. Lay the rice pieces down on the basket of an air fryer and spray them with cooking spray. Air fry at 375F for 5 minutes, and check to see that they’re starting to brown on the outside. If necessary, flip them over to get even coloring, then air fry about 5 minutes longer. Set the air fried rice on a clean work surface, then top with a large spoonful each of the fish mixture. Garnish with sesame seeds and scallions. Serve with a side of soy sauce and enjoy immediately!
