Using a microplane, carefully shave the frozen watermelon into small bowls. Use a paper towel in between the fruit & your fingers to keep them from getting too cold! Top the shaved fruit with honey and a sprinkle of tajin. Garnish with a sprig of fresh mint. Enjoy immediately!
