These fried potato flautas are deliciously crispy on the outside, with a cheesy potato center. A divine and satisfying dish!

Bring a large pot of water to boil over high heat. Add in the potatoes to cook for about 15 minutes, until fork tender. Drain and set aside. In a large bowl, add in the cooked potatoes, butter, sour cream, crema, and kosher salt to taste. Use a metal whisk or potato masher to smash the potatoes until smooth. Add in the Oaxaca cheese and stir until evenly combined. Heat a large skillet over high, and place the tortillas on to warm up. Cook for about 2 minutes, carefully flip them, and then cook for about a minute on the other side. Remove from pan. In each tortilla, add a heaping spoonful of the mashed potato mixture. Fold the tortillas in half, closing the potato mixture in. Heat oil in a large pot, until it reads 350 degrees F. Carefully add in the tortillas and fry about 15 minutes, until deep golden brown and crispy. Remove and place on a paper towel-lined plate. Immediately season with some kosher salt. Top the flautas with kewpie mayo, salsa verde, radish slices, cabbage, and cilantro. Enjoy immediately!
