Roast the garlic. Preheat oven to 375°F. Remove the outer paper layers from the garlic heads, then cut off the tips to expose the bulbs. Place the garlic heads onto a sheet of aluminum foil. Carefully place one tablespoon each of butter on top of the exposed cloves. Wrap the garlic tightly in the aluminum foil and bake for about 1 hour, until garlic is deep golden brown and very soft. In a large bowl, combine the 1 stick softened butter, sharp cheddar, Gruyère, pepper, red pepper flakes, lemon zest, and lemon juice. Squeeze the roasted garlic cloves out of the heads and into the bowl. Mix together until a thick paste forms. On one half of the Italian bread loaf, spread on the butter paste thick and evenly. Spread the sliced mozzarella over the top. Bake for about 15 minutes, until deep golden brown. Remove from oven. Slice bread into small pieces for serving. Enjoy!
