On each slice of bread, spread out 1 piece of each type of cheese. Spread out kimchi on one side, then close the sandwich. Heat a cast iron skillet over medium heat. Spread 1/2 the kewpie mayonnaise on the outside of one side of the sandwich and place that side down on the skillet. Using a sandwich press or something weighted and heat-safe, press the sandwich down and cook for 5-7 minutes, until the bottom is golden brown. Spread the other half of the mayonnaise on the top outside of the sandwich, then carefully flip. Cook and press down on this side for 5-7 minutes, until the bottom is golden brown and all the cheese is melted. Cut in half and enjoy!
