Pickled jalapeño boats! 🌶️⛵️ another fun, high protein lunch/snack… this time with a lil spice✨ my dad said he grew up eating pickled jalapeños stuffed with tuna salad, and it sounded delish so I whipped up this version. We all loved it! Recipe below‼️

In a large bowl, combine everything except the 8-10 whole pickled jalapeños. Stir to mix and taste for seasoning. Cut the whole pickled jalapeños down the middle length wise. Use a spoon to scoop out the inside seeds. Stuff the jalapeños with the tuna mixture. Serve and enjoy! Can leave refrigerated for a day or two.
