Sweet Potato Casserole

This is hands down my favorite Thanksgiving dish. A classic sweet potato casserole with a pecan and marshmallow topping.

Preheat oven to 350F. Use the AbyAMC Steaming System (or a large pot with a steamer basket) to steam the sweet potatoes until fully cooked. Empty the water from the pot and add the sweet potatoes back in. Mash them with a potato masher. Add in the brown sugar, butter, cream, eggs, vanilla, cinnamon, nutmeg, and salt. Stir to evenly mix. Add the sweet potato mixture into a medium baking dish. Spread to flatten, then top with the chopped pecans. On top of that layer, add the marshmallows. Bake for 25-30 mins, until marshmallows are deep golden brown. Serve and enjoy!
