A delightful cherry chocolate bark recipe made from extra cherries, dark chocolate, and coconut oil, with an optional caramel drizzle. This simple dessert is easy to make and perfect for a sweet snack.

Slice the cherries in half lengthwise and line them up in tight, even rows on parchment paper. In a microwave safe bowl, add in the dark chocolate chips and coconut oil. Microwave for 1 minute, stopping halfway to stir. Drizzle the melted chocolate over the top of the cherries and spread it out. If using caramel, drizzle that over the top. Freeze for at least 2 hours until it’s all hardened. Break into bark pieces and store in the freezer. Enjoy!
