Preheat the oven to 400°F (200°C). Line a baking sheet with foil. Drizzle the sweet potato with olive oil, then use a fork to poke several holes all over the outside. Wrap in aluminum foil and bake for about 1 hour, until very tender. Meanwhile, arrange the prosciutto on the prepared baking sheet. Bake for 10-15 minutes, until crispy. In a small bowl, mix together the brown and granulated sugars. Cut the baked sweet potato in half lengthwise. Score the flesh with a knife at ½-inch intervals, then spread the butter over both sides. Sprinkle with the cinnamon and the sugar mixture. Using a kitchen torch, brûlée the sugar until melted and deeply browned. Crumble the crispy prosciutto, then sprinkle over the brûléed sweet potato, along with the walnuts. Enjoy!
