Cut the goat cheese log into 8 even pieces and roll up the pieces into balls. Set up the flour, beaten egg, and Panko in 3 separate bowls. Season the flour bowl and panko bowl with salt and pepper. Dredge each goat cheese ball in the flour, then evenly coat the ball with egg, and then dredge in the Panko to create an even layer. Set the balls on a plate and place into the freezer for 20-30 minutes. Line an air fryer basket with foil. Spread the goat cheese balls out evenly on the foil, then spray evenly with cooking spray. Air fry at 350F for 5 minutes, then open the air fryer and rotate the balls. Spray with more cooking spray then air fry at 350F for 7 minutes. Remove from air fryer. On a serving plate: take each piece of prosciutto and roll them up into ribbons. Place the prosciutto ribbons down, then place 3 peach slices on top. Carefully the goat cheese balls on top of the peaches. Drizzle on spicy honey and balsamic glaze. Enjoy!
