Heavenly air fried crispy potatoes with osetra caviar, perfect as an appetizer or special snack.

Bring a large pot of water to boil. Add in a hefty pinch kosher salt. Add in the potatoes and boil for 20 minutes, or until just about knife tender. Drain and set aside to cool slightly. When cool enough to handle, lay the potatoes on a cutting board. Use the bottom of a glass to smash them down into discs. Line air fryer basket with foil. Move the potatoes to the basket and drizzle with olive oil, salt, and pepper. Air fry at 400F for 17-20 minutes (until deep golden brown and crispy). Remove from air fryer and serve with crème fraiche, scallions, and caviar. Enjoy!
