1. In a large bowl, beat the egg; then add in 1 cup of the Greek Yogurt, and the flour, sugar, baking powder, vanilla extract, and kosher salt. Mix well until the dough is evenly combined and thick. 2. In a large pan with high sides, add vegetable oil until there are about two inches of oil in the pan; heat it over medium-high. When the oil is heated to 350ºF, using a spoon, carefully slip scoops of the donut dough into the oil. Allow them to fry until golden brown on all sides, then move them to a paper towel-lined plate. 3. In a small bowl, add the remaining ¼ cup Greek Yogurt, plus the lemon zest and juice. Stir to combine. 4. Using a sharp knife, slice a small slit into the doughnuts. With a small spoon, add a bit of the berry jam and yogurt/lemon mixture into each doughnut. Garnish the sufganiyot with powdered sugar. Enjoy!
