Cacio e Pepe Corn Ribs

These cacio e pepe corn ribs are a favorite, perfect for when corn is in season. They are lightly browned and seasoned with a butter, salt, and pepper mixture, then finished with Parmesan, pecorino, and fresh basil.

Preheat oven to 400 degrees F. Space quartered corn out on a parchment-lined baking sheet. In a microwave safe dish, add in the butter, salt, and 1 tsp pepper. Microwave for 45 seconds, so butter is melted. Stir to mix. Use a pastry brush to brush about 2/3 of the butter mixture onto the corn ribs. Put them in the oven to bake for about 15 minutes, until lightly browned in some spots. Remove from oven and brush with remaining butter mixture, and sprinkle with Parmesan and pecorino cheeses. Add on remaining 1 tsp of pepper and garnish with basil. Serve immediately and enjoy!
