Crispy Spicy Rice Waffles with Spam, Avocado, Cucumber, and Kimchi

My favorite thing to make 🥹 crispy rice waffles - but this time the rice is SPICY 🌶️ (thanks for the inspo @jamesyworld) I also did a fun mosaic on top with spam, avocado, cucumber, and kimchi! 🎨 get the recipe below‼️

Preheat mini waffle iron. In a large bowl, combine the cooked rice, chili oil, sesame oil, and egg. Stir to evenly mix. Spray the waffle iron with cooking spray and layer in a couple large spoonfuls of the rice mixture. Flatten it out, then close the waffle iron. Cook for about 15 minutes, the rice should get crispy and firm on the outside. Repeat for 2nd waffle. Meanwhile, heat a small nonstick pan over medium-high and add in the spam cubes. Sauté until the spam is golden. Set aside. On top of the cooked waffle, create a mosaic pattern with the cooked spam cubes, avocado cubes, cucumber cubes, and pieces of kimchi. Top with sriracha, kewpie mayo, sesame seeds, and sliced scallion. Serve immediately & enjoy!
