Delicious and easy-to-make avocado sushi boats, perfect for a tasty and fun meal. Stuffing avocados has never been so good!

In a large bowl, combine the tuna cubes, kewpie mayonnaise, and sriracha. Stir to evenly mix. Add in about 3/4 of the sliced scallions, plus the cucumber. Stir to mix. In the halved avocados, fill the holes with the cooked sushi rice, then pour on the soy sauce. Top with the tuna mixture, then garnish with the remaining scallions, the sesame seeds, and eel sauce. Enjoy!
