This is a simple & filling sweet breakfast that won’t make you feel all weighed down like normal pancakes do! In college, we used to all make these on the little panini press in the sorority house! Good times 😅

Add the banana to a medium bowl and mash it up well. Crack the egg into the bowl and mix to incorporate. Heat a small skillet over medium-high and spray it with nonstick cooking spray. Once hot, pour the banana mixture in. Allow to cook until set on one side, about 3 minutes. Carefully flip the pancake and allow to cook 2-3 more minutes on the other side, until set. Carefully remove from the pan and top with dark chocolate chips & maple syrup if you like. You can add other toppings if you want, such as nuts, seeds, or fruit!
