Mom's Homemade Chicken Parmesan with RAGÚ®

My favorite chicken parm is my mom’s! I finally tried making her recipe myself and it came out SO well! It features RAGÚ® Kettle Cooked Marinara sauce, which has an amazing rich & homemade flavor. Get the recipe below!

Set up a dredging station. Add the eggs into one baking dish, and stir to thoroughly mix. Add the flour to another baking dish. In a third baking dish, add the seasoned bread crumbs plus about 1/2 cup of the Parmesan cheese. Dip the chicken cutlets into the flour and evenly coat. Then dip them into the egg mixture and evenly coat. Finally, dip them in the bread crumb mixture and evenly coat. Heat vegetable oil in a high-sided pan over medium-high. When the oil reaches 350 degrees F, add the breaded chicken cutlets in, being careful not to overcrowd. Cook for several minutes per side, until the breading is deep golden brown and the chicken reads 165 degrees F internally. Remove from oil and set on a paper towel-lined plate and immediately season with some kosher salt. Preheat oven to 375 degrees F. Add the cooked chicken cutlets to a large baking dish and top with plenty of marinara sauce. Add a few slices of mozzarella on top of each chicken cutlet, then top with the remaining Parmesan. Place into the oven to bake for 10-15 minutes, until the cheese is melted and gooey. Then the oven on broil mode and broil just until the cheese is browned. Remove from oven. Garnish with fresh basil and crushed red pepper flakes. Enjoy!
