A healthy and filling grain salad featuring a lovely homemade vinaigrette.

In a large bowl, combine cooked rice, drained chickpeas, drained artichoke hearts, roasted red peppers, cherry tomatoes, cucumbers, olives, and parsley. Season to taste with salt & pepper. In a small jar, combine lemon juice, olive oil, garlic, mustard, maple syrup, and salt and pepper to taste. Shake & mix well. Add vinaigrette over the salad and mix. Enjoy!
