Make simple syrup. In a small pan over medium high, add in the sugar and water. Cook until the sugar is dissolved, then set aside. You can store this in the fridge and use the leftovers for future cocktails! Add a handful of ice into a cocktail shaker, then pour in the vodka, lemon juice, and 2 tsp of the simple syrup. Close the shaker and mix well. Cut the lemon rind into thin strips and wrap them around a chopstick or straw, holding them down for a few seconds so they turn into little curls! Set these aside for garnish. When ready to serve, add a few cubes of ice into a champagne flute, then pour in the vodka mixture. Top the glass with champagne, then garnish with the lemon swirl. Enjoy!
