A quick and easy recipe for gooey, satisfying nachos cooked in an air fryer, featuring homemade pickled onions and jalapeños, seasoned ground beef, beans, and fresh toppings.

Make the pickled veggies: In a pot over medium heat, combine the vinegar, water, and sugar. Cook until the sugar dissolves. In a large sealable container, add in the sliced onion and jalapeños. Pour the vinegar mixture over to cover them completely, and then set aside to pickle. Meanwhile, line the basket of an air fryer with parchment. Lay down a layer of Tostitos Scoops, then a couple handfuls of cheese, then some of the cooked ground beef, then a few spoonfuls of each of the beans, then a few spoonfuls of salsa. Repeat this process creating a few layers. Turn the air fryer to 300F, then put the basket of nachos in. Cook for about 10 minutes, or until the cheese is melted and gooey. Remove the nachos and top them with the chopped tomatoes, cilantro, avocado, and the pickled onions and jalapeño. Serve immediately and enjoy!
